
The longer I ate plant based foods the more I started experimenting with new food and recipes. I tried butternut squash, eggplant, kale and bok choy for the first time. It got to the point where I started branching out and decided to make some buffalo cauliflower tacos. I’d been looking at several recipes for the tacos and decided to try them one day. As I looked up the recipe online I saw it had a vegan coleslaw on top of the cauliflower. The coleslaw recipe called for vegan mayo, mustard, salt, pepper, garlic powder, onion powder, rice vinegar and sesame sauce. Up until this point I hadn’t been eating any mayo because of the ingredients in it. I looked into vegan mayo and its ingredients and decided to give it a try since it didn’t include any dairy or eggs. I followed the directions for the coleslaw and it came out pretty good.
As a side note: All plant based food is vegan but not all vegan food is plant based. Vegan items can include beer, processed foods, fried foods and a lot of other sugar based desserts. Plant Based is focused on eating things that come from the ground.

Soon after I made the coleslaw I started buying other store bought vegan food. I found a recipe for a buffalo chickpea quesadilla that called for dairy free cheese. Whole Foods has many vegan items and I knew they would have vegan cheese. I found one that I liked and used it in the chickpea quesadilla. The more I started experimenting with different foods the more vegan alternative options I found. Months down the road I realized these processed foods are not good for our body. Consuming these foods were defeating my original goal of eating clean. I found myself becoming dependent on these store bought products. It took me a while to wean myself off them. They were convenient, quick, tasty and easy-go-to items for a meal.

It forced me to have a conversation with myself about my goals and the reason for going plant based. My goal was to listen to what Spirit told me when I started my plant based journey. Looking back I can see the reason spirit had me eating plant based. I needed to detox my mind and body from old patterns. Eating plant based with a combination of fasting helped me break free from ideas that no longer served me.
