
While in Merida, MX I decided to take a plant based cooking class that I found on Airbnb Experience. The class lasted about 3 hours and there were 4 people in the class including myself. The class was more work than I expected but it was definitely worth the effort. The teacher had everyone help make the meal. We learned how the Mexicans made tortillas before processed flour was available. Below you can see us using a grinder to help process the ingredients needed to make the tortillas.


There were a variety of vegetables laid out on the kitchen island when we arrived. We chopped peppers, onions, cabbage, squash and chillies. The menu consisted of avocado, curried cabbage, chili sauce, sweet papaya, fried zucchini, tortillas, and a tomato and pumpkin seed dip.
